Tonight I'm joined by one of the top dance music producers, the South Coast's very own Dave Spoon!  After a flurry of commercial success, Dave has managed to combine some massive DJ gigs, some brilliant releases, a stack of top flight remixes and some wicked underground dirty tracks.  Tonight we'll hear about his involvement with the massive Toolroom Knights New Years Eve Party at Ministry Of Sound, his plans for a solo album, and the story behind one of the biggest underground tracks of the year 'Impure Imagination'!  Plus of course I'll be spinning up some of his work, Dave will be on the guest mix and we'll be giving away some lovely Toolroom goodies too!

Fabio on FIRE!

Tonight's radio show is going to be pure indulgence for me as I'm going to be able to delve back through the archive and play some real classics in support of my very special guest Fabio.  One half of the Radio 1 DJ duo Fabio & Grooverider, there really is no other DJ partnership with the same experience, soul and love of music than these dons of dance music.  These guys have continually lead and transformed their way through multiple genres and provided the soundtrack to many a house party, late night drive and illegal rave!  Still rocking crowds and belting out the DnB on Radio 1, Fabio & Grooverider have been there, played it and smashed it!

Fabio & Grooverider's status within the music industry has recently been honoured with the release of Masterpiece on Ministry Of Sound, which is a retrospective journey into the sounds and styles that accompanied their career to date.  It's a great compilation and one we'll explore tonight as we chat about Fabio's journey from Dub, Rare Groove, Funk, Hip Hop, House, Jungle and Drum and Bass. And his rise from pirate radio in Islington to international BBC Radio 1.

A wet and miserable night here in the UK is just about to get a whole lot better!  My special guest on the radio show tonight is Hed Kandi DJ Marie Claire.  We'll be talking about her new CD Hed Kandi World Series London, running a cool competition and playing a tasty mini-mix from Marie too.

It's great to see Hed Kandi hit us with something fresh and sassy, with a nod to their London roots, and a clever reference to the capital of fashion!  It's quality work from Marie on the decks and super stuff from the design team with the sleeve artwork - which is even better than usual.  It's a great release so go and grab one straight away.

Alan Connor's superb new single 'Sun Went Down' has now begun distribution to DJ's and radio stations and the reviews are coming in. My sun-drenched Ibizan beach remix is featured alongside the quite stunning production from Beltek!  Release date is the 9th August, on New State.

 “Step into the arena UK singer / songwriter Alan Connor with the Beltek produced Sun Went Down, a sunshine glowing, old skool piano driven, progressive vocal anthem for summer 2010!! Also included a more chilled, 'hammock house' remix from Simon Sinfield.”

Dimitri: Feel good melodic progressive house with the light touch of the classic Balearic house sound. The piano melody is unforgettable and the vocals by Alan are delivered in the best possible way for that type of tunes. Of course the production is faultless and I must highlight that the lyrics are pretty addictive as well that is great to dance in a beach bar under the sun along with this fantastic track and all the people together to sing-a-along : “where are you???. “ The remix by Simon is really melodic and emotion and is the kind of tracks that personally touched me instantly from the very first listening of it.  Excellent release for the summer that is perfect to leave it play on repeat mode while you drink your summer cocktails.

(Producer/ rising presenter) Jonny’s “Salmon and Sweet Potato with Rocket”

Ingredients:

1 x Salmon fillet (with scales)
1 x Sweet potato
Rocket leaves
Half a lemon
Thyme
Pinch of rock salt (crushed)
Cajun spices
Teaspoon of balsamic vinegar
Chilli infused oil
Black pepper

Prep time: 5 mins
Cooking time: 10-15 mins

How to cook:

1. Pre-heat the oven to 200 degrees
2. Peel and thinly slice the sweet potato
3. Put potato slice into a bowl and add chilli oil, vinegar and as much Cajun as you want (depending on how spicy you want it)
4. Mix together in bowl with a spoon until all slices are covered and slightly dark in colour
5. Lay out on foil on oven tray and put into oven
6. Pre-heat a grill pan brushed with chilli oil
7. Scale side down sprinkle top of salmon with thyme, crushed rock salt
8. Scale side up sprinkle with pepper and salt
9. Add to pan and cook each side for 1 min
10. Then put on low heat and cook each side for 5-7 mins
11. Whilst salmon is cooking wash rocket leaves and mix in a bowl with a black pepper and a squeeze of a quarter lemon
12. Squeeze the other quarter over the salmon (scale side up)
13. Add rocket to plate
14. Check potatoes, if look slightly brown/ dark orange then take out (should still be bright orange in the middle) and add to rocket
15. Check salmon is cooked all the way through (light pink)
16. Take salmon of heat and add to plate
17. Done
18. Bring into work to receive much praise and adoration from boss and promise of money waiting for him next week
