:: Sweet Tunes & Sweet Potatoes ::

I've had a brilliant way to start the show tonight.  Producer Jonny made myself and Niall dinner and we've just had a picnic in the studio.  Awesome!  Ladies he's a catch.  Jonny's recipe is below!

(Producer/ rising presenter) Jonny’s “Salmon and Sweet Potato with Rocket”

Ingredients:

1 x Salmon fillet (with scales)
1 x Sweet potato
Rocket leaves
Half a lemon
Thyme
Pinch of rock salt (crushed)
Cajun spices
Teaspoon of balsamic vinegar
Chilli infused oil
Black pepper

Prep time: 5 mins
Cooking time: 10-15 mins

How to cook:

1. Pre-heat the oven to 200 degrees
2. Peel and thinly slice the sweet potato
3. Put potato slice into a bowl and add chilli oil, vinegar and as much Cajun as you want (depending on how spicy you want it)
4. Mix together in bowl with a spoon until all slices are covered and slightly dark in colour
5. Lay out on foil on oven tray and put into oven
6. Pre-heat a grill pan brushed with chilli oil
7. Scale side down sprinkle top of salmon with thyme, crushed rock salt
8. Scale side up sprinkle with pepper and salt
9. Add to pan and cook each side for 1 min
10. Then put on low heat and cook each side for 5-7 mins
11. Whilst salmon is cooking wash rocket leaves and mix in a bowl with a black pepper and a squeeze of a quarter lemon
12. Squeeze the other quarter over the salmon (scale side up)
13. Add rocket to plate
14. Check potatoes, if look slightly brown/ dark orange then take out (should still be bright orange in the middle) and add to rocket
15. Check salmon is cooked all the way through (light pink)
16. Take salmon of heat and add to plate
17. Done
18. Bring into work to receive much praise and adoration from boss and promise of money waiting for him next week
